MY CUISINE

the simplest combination of ingredients can transport us forward and backward in time, to any place in the world, bring us home, make us travel through imagination, move us, heal both body and soul.

For this reason, what I truly wish to achieve with my dishes is to touch the hearts of my clients, to evoke feelings and memories, to turn every dining experience into a personal sensory journey.

Fish is my spirit guide, the ingredient I love the most.

Sicilian cuisine is deeply tied to the sea, and it’s an integral part of my cultural and professional heritage. I love tradition, but I also love experimenting, exploring ingredients and techniques, creating unique dishes that can communicate an idea, tell a story, a piece of my life, a stranizza d’amuri (a touch of wonder in love).

For me, quality and seasonality are not simple choices, but fundamental principles. Every product I bring into my kitchen must be excellent, respect its natural cycle, and tell a story. Selecting raw materials is an act of care and respect, because a great dish begins first and foremost with extraordinary ingredients.

MILLEPIATTI is my kitchen, and my kitchen is all of this: it is myself, my story, my vision, my origins, my future. All seasoned with that bittersweet sauce we call life. And I can’t wait to share it with you, bite after bite.

 

Each of my creations is meant to be a journey between memory and innovation, between roots and discovery. My recipes are a constant balance of technique and instinct, precision and feeling, tradition and reinterpretation..
