wish to achieve with my dishes is to touch the hearts of my clients, to evoke feelings and memories<\/strong>, to turn every dining experience into a personal sensory journey.<\/p><p>Fish is my spirit guide, the ingredient I love the most.<\/p><p>Sicilian cuisine is deeply tied to the sea, and it\u2019s an integral part of my cultural and professional heritage. I love tradition, but I also love experimenting, exploring ingredients and techniques, creating unique dishes that can communicate an idea, tell a story, a piece of my life, a<em> stranizza d\u2019amuri<\/em> (a touch of wonder in love).<\/p><p>For me, quality and seasonality are not simple choices, but fundamental principles. Every product I bring into my kitchen must be excellent, respect its natural cycle, and tell a story. Selecting raw materials is an act of care and respect, because a great dish begins first and foremost with extraordinary ingredients.<\/p><p>MILLEPIATTI is my kitchen, and my kitchen is all of this: it is myself, my story, my vision, my origins, my future. All seasoned with that bittersweet sauce we call life.
